When I wanna take a treat for my clients or bring some sweet snacks to the party, I like to make these energy balls. They are easy to make and they stay in the fridge at least for a week for a go-to snack. I like to put them as a little healthy treat into the boys' school lunch box.
You simply put all the ingredients into a food processor and mix until a sticky big dough is formed. Spoon out a batch and roll into a small ball. At this point, my two little boys like to help. Although, after rigorous tasting in between rolling, they are pretty much done after 5 minutes.
If you have a nut allergy, you can use tahini or sunflower butter. Peanutbutter is probably the cheapest option though.
Oats, peanut butter and hemp seeds top up that protein content. So what do you need?
Ingredients list is below.
INGREDIENTS:
1 cup oats (110g)
2cups (200g) peanutbutter
12 dates (or 1cup raisins and 6 dates)
1 tbl maple syrup
1/2 cup hemp seeds
1/3 cup chocolate chips
2-4 tbl non-dairy milk (around 60ml)
coconut for coating
Put all the ingredients into the food processor and blend until a homogenous, well mixed dough is formed. Use a spoon or an ice-cream scooper and form small balls with your palms. Cover in coconut flakes.
Keep refrigerated in air-tight container for a week.
